1. Dolce Vita | Villa Marie Saint-Tropez, Ramatuelle

In the middle of Ramatuelle's pine forest, far from conceptual tables and over-thought plates, Dolce Vita cultivates one of the most sincere experiences on the peninsula. This is Sibuet's signature: generous, confident Mediterranean cuisine that prefers instinct to demonstration. No fuss, no muss, just dishes that speak directly to the palate and the heart. Under the muffled glass roof or on the terrace surrounded by pine trees, you'll find this simple but precious idea: eating well without taking yourself too seriously.

In the evening, the perfectly executed menu focuses on the essentials: fish of the day, seasonal vegetables, citrus fruit. The lemon soufflé, now a must, leaves many with the same childlike smile as an addictive dessert. At lunchtime, the spirit is even sunnier: Nice zucchini salad, melt-in-your-mouth pissaladière, sea bream that goes straight to the point, fragrant tian... A cuisine that comforts, delights, reassures, almost regressive, served in a 5-star hotel setting that remains chic but deeply family-oriented.

All day long, life flows around the Bellini & Bikini Pool Bar, with its summer cocktails, chilled rosé and that happy slowness that only the lagoon view can produce. Even breakfast reflects the same philosophy: fresh fruit, fresh eggs, juice of the day, warm pancakes... nothing ostentatious, just what you need to start the day with a smile.

Le Dolce Vita remains one of the most vibrant restaurants in Saint-Tropez: genuine, warm, gourmet, driven by the desire to please rather than impress. An address apart, where eating in a 5-star hotel is like eating at a friend's house, with an added eye for detail.

2. La Ponche

The historic Hôtel La Ponche, which helped make Saint-Tropez famous during the Nouvelle Vague era, is home to chef Simon Pinault's Mediterranean restaurant on its small terrace overlooking the sea. The menu is fresh and classic, drawing on both Italian and Provençal traditions: fish soup, ceviche of sea bream with citrus and basil sorbet, catch of the day, Tarbouriech oysters, cucumber pickles, rosé balsamic vinegar and dill pearls. Undoubtedly one of the best tables in the heart of Saint-Tropez village.

3. La Vague d'Or | Cheval Blanc Saint-Tropez

Arnaud Donckele continues to rack up accolades at the Cheval Blanc Saint-Tropez (LVMH) palace: 3 stars in the Michelin guide, 5 Toques and 19/20 in Gault & Millau. The terrace lined with umbrella pines, the breathtaking sea view of the Gulf of Saint-Tropez, and the impeccable lines designed by Jean-Michel Wilmotte immediately set the stage for a rare moment. The cuisine impresses with its precision and highly personal take on Provençal terroir. It's important to note that the experience is demanding: this is haute cuisine, sometimes a little cerebral, which may confuse those who prefer a more straightforward approach. As for the bill, it reflects the restaurant's high ambitions: let's just say that you come here for an exceptional interlude, accepting that your credit card will also undergo an extreme experience.

Among the iconic creations, the Chopin de liche grilled over an open fire à la Victor Petit, inspired by an encounter with a fisherman, perfectly illustrates this cuisine where the memory of a simple sandwich becomes an act of artistry.

4. La Voile | La Réserve Ramatuelle

In Michel Reybier's exclusive, intimate palace, far from the hustle and bustle and bling bling of the Tropez, you'll find La Voile, a two-Michelin-star gourmet restaurant since 2020, led by Éric Canino. Tuna rubbed with travel spices, langoustine and caviar, Bresse poultry and lobster are all on the tasting menu. Unless you're tempted by the second tasting menu, which is entirely plant-based but just as attractive.

5. Colette | Hôtel Sezz, Saint-Tropez

A contemporary haven of peace in the wildest part of the peninsula, Hôtel Sezz, which celebrated its 12th anniversary in 2022, is home to chef Philippe Colinet's Michelin-starred Colette restaurant, open only for dinner. His uncluttered, plant-based cuisine respects seasonality and pays tribute to local produce and Mediterranean flavors: pigeon, polenta and smoked tea; grilled oyster, shallot cream, watercress pulp and bread charcoal..

6. La Palmeraie | Château de Valmer, La Croix-Valmer

Set amidst the vineyards and olive groves of La Croix-Valmer, Château de Valmer, a five-star Relais et Châteaux hotel, has its own Michelin-starred restaurant, La Palmeraie, where you can dine amidst century-old palm trees. Alexandre Fabris's Mediterranean and Provencal cuisine, washed down with organic wine from the estate, features ingredients from the vast organic kitchen garden where tomatoes, zucchinis and zucchini flowers, artichokes, beans, pumpkins, lettuces, eggplants (black, white, mauve)... grow in the sun

7. Club l'Indochine | Althoff Villa Belrose, Gassin

The former gourmet restaurant of the Althoff Villa Belrose, a five-star hotel with the allure of a Florentine villa perched on the heights of Gassin, becomes Club l'Indochine, a pop-up restaurant from Vietnamese-born Berlin chef The Duc Ngo. On the menu, gourmet French cuisine infused with the intense herbs and spices of Vietnam. Executive Chef Jimmy Coutel is behind the stoves on a daily basis, for tasty moments chiselled on the hotel's large panoramic terrace. The views over the Gulf of Saint-Tropez are breathtaking.

8. Il Giardino | Byblos Saint-Tropez

The latest dining experience at the legendary Byblos, Il Giardino takes its inspiration from Italian gardens to create an enchanted interlude beside the iconic swimming pool. Under a planted pergola, with hand-crafted ceramics, a terracotta palette and soft furnishings, the setting is an invitation to la dolce vita. In the kitchen, Executive Chef Nicola Canuti celebrates his native Italy. Plates feature seasonal cuisine designed to be shared: sea salad (prawns, octopus and squid), fritto misto with crisp vegetables or smoked burrata with marinated zucchini.

On the crudi and carpaccio side, tonnato-style red tuna rivals the freshness of beef carpaccio with Vacche Rosse Parmesan and summer truffle. Homemade pasta, made with Italian flours sourced from small producers, reconciles tradition and creativity: paccheri alla carbonara, gnudi ricotta-spinach a la N'duja, spaghetti with lobster for two... Not forgetting wood-fired meat or fish dishes such as coquelet diavola or T-bone Black Angus to share. Pastry chef Geoffrey Turpin's sweets extend the experience with a touch of elegance: gianduja dome, red fruit gratin or crispy Chiacchiere topped with Marsala sabayon. A sensory immersion in the Italian art of living, Saint-Tropez style.

9. Byblos Beach

The beach club of the Saint-Tropez palace, quality of service and attention to detail reign supreme at Byblos Beach, in a relaxed atmosphere that pays homage to the marine world. Bleached wood, openwork rope parasols, shade sails reminiscent of a boat - this is the setting for chef Kevin Pasquet's light, Mediterranean dishes based on fresh, seasonal produce grown by local producers and enhanced by herbs, fruit and flowers from the Byblos kitchen garden. On the menu: a wide choice of salads such as the César Bowl, fine beef carpaccios, sea bass ceviche, braised lobster risotto, not forgetting a profiterole-style Choux with Guanaja dark chocolate and pine nut praline, straight from the imagination of pastry chef Geoffrey Turpin. On the beach side, you can lounge on a deckchair in the same orange hues as the village's facades, and even children can enjoy their sunny escape thanks to a fun mocktail menu and a toy lending service.

10. Gigi Rigolatto Saint-Tropez

Paris Society moves from the banks of the Seine to the shores of the Mediterranean, and entrusts designer Hugo Toro with its Gigi Rigolatto Saint-Tropez, just a stone's throw from Pampelonne beach, amid olive trees and umbrella pines. A concentration of dolce vita, the place features a restaurant with tables set under the mimosa or in the pine forest, where you can savour the great Italian classics - pizza, vitello tonnato, beef carpaccio, linguine alle vongole, grilled octopus - as well as the Bellini Bar and its swimming pool, Holidermie massage "salons" and the whole panoply of farniente: hammock, sea, chic boutique, pétanque courts, ping-pong tables, kid's club.

11. Matsuhisa Saint-Tropez | Airelles Saint-Tropez, Château de la Messardière

Taken over by the Airelles collection (Courchevel, Bastide de Gordes, Château de Versailles, etc.), the Château de la Messardière welcomes guests to its terrace with panoramic views of Pampelonne Beach, featuring chef Nobuyuki Matsuhisa's Matsuhisa gastronomic concept., better known by his nickname "Nobu". The emperor of global Japanese gastronomy presents his salmon or Wagyu sashimi tacos, umami chili-style bass or tempura king crab with amazu ponzu sauce. Every evening in summer, the restaurant plays live music, and the evening continues in the Pool Bar Pampelonne by the pool.

12. Beefbar Saint-Tropez | Hôtel Lou Pinet, Saint-Tropez

After Monaco in 2005, Hong Kong, Tulum and Mykonos, the Beefbar chose the hotel Lou Pinet to set up shop in the most fashionable village on the Côte d'Azur. On the terrace overlooking the swimming pool, exceptional meats are cooked between grill and street food. While American Black Angus Prime, Australian Wagyu and certified Japanese Kobe beef are the stars of the menu, fresh Mediterranean dishes are also served under the canisses: ceviche, salad, grilled fish..

13. Vista | Hôtel Lily of the Valley, La Croix-Valmer

Regulars to the peninsula have their hype spot at the Vista, alongside the superb 25 m-long swimming pool of the Lily of the Valley hotel. Open all day, it boasts a terrace with a 180° view of the Grande Bleue and the Golden Isles. After cocktails and chic snacks, chef Vincent Maillard proposes amberjack marinated in fennel; slow-cooked Saint-Pierre, chickpeas, cebette, saffron and favouilles jus; braised Sisteron lamb shoulder with savory. The decor, by Philippe Starck, pays tribute to the skills of Provence: objects in carved olive wood, ceramics from Vallauris, glass bottles from Biot.
