1. Les Hortensias du Lac, Landes

Situated on the front line of the marine lake, this Hossegor hotel is at the crossroads of Landes charm, surf culture and nature-oriented lifestyle. A local institution opened in the 1950s, it has undergone an inspired renaissance under the impetus of Frédéric Biousse and Guillaume Foucher, founders of Fontenille Collection. Their vision has breathed new life into this grand 1930s residence, sublimating its heritage. The original beams, once tinted burgundy, are now adorned in an elegant fir green, in perfect harmony with the surrounding pine forest and the changing reflections of the lake. The 25 rooms and suites have been completely redesigned to reflect the charm of the past.

Just a stone's throw away, the Atlantic Ocean unfurls its legendary waves, prized by surfers the world over, notably on the emblematic La Gravière beach. This duality of fresh and salt water shapes the very soul of Les Hortensias du Lac. The hotel is inspired by this surf culture. The décor blends Art Deco lines, seaside spirit and references to surf lodges in the Hamptons or California. Light wood, natural materials and soft lighting create a laid-back, elegant and timeless atmosphere, where you can live barefoot, carried by the sea breeze.

Hammam, sauna, Nordic baths, yoga sessions and natural treatments by L:A Bruket and myBlend create a regenerating experience. The hotel offers several Day Pass packages, including Champagne Escape, a chic and sparkling interlude combining a 50-minute "Les Hortensias" signature massage, a 30-minute MyBlend facial and access to the Spa. The experience continues with tapas and a glass of champagne, overlooking the lake as the sun sets (240 euros per person, by reservation).

On the restaurant side, chef Philippe Moreno's Michelin-recommended restaurant overlooks the lake. Having worked in the kitchens of three-starred Gérald Passedat in Marseille, where he was second-in-command in pastry-making, Moreno focuses on seafood: line-caught sea bass, octopus, imperial shrimp... all sourced locally and prepared according to the seasons. In winter, the Goûter du Lac is a comforting rendezvous for families, with homemade pastries imagined by chef Philippe Moreno, to be enjoyed between two invigorating walks on the beach or after a massage at the spa.

Perched four meters above the ground, the 21 35 m2 lodges offer a unique experience, somewhere between a dream cabin and a high-end suite. Each space, decorated by a contemporary artist, becomes an immersive work of art in its own right, with large bay windows opening onto nature and a terrace equipped with a private Jacuzzi. Comfort is omnipresent: king-size bedding, elegant bathrooms, amenities worthy of a luxury hotel... In the morning, breakfast is delivered in a basket to be hoisted on a pulley, a playful and poetic touch. In 2026, three new lodges were added: Into The Wild by Anne-Caroline Frey, Reflets by David Sitbon and Ride My Bike by Thalia Lempert.

On the gastronomic front, the Ardent restaurant, headed by chef Thomas Besnault, offers locavore and plant-based cuisine, directly inspired by the surrounding forest, with each dish recounting a territory and playing with flavors. And to push the envelope even further, vegetables, herbs and edible flowers are grown organically at La Ferme, a 30-hectare estate dotted with hedges, which is also home to an old-breed poultry farm.

Located half an hour from Perpignan, in the heart of the Pyrénées-Orientales region, Domaine Riberach is not a classic. It's not every day you get to sleep in wine vats! A former wine cooperative, the slow-living, eco-friendly hotel has been reinvented with flair by Luc Richard and Karin Pühringer, a couple of architects who fell in love with the site. Their idea was to transform this industrial space into an ecolodge, integrating vineyards, raw architecture and a certain art of living.

Its Michelin-starred (and Green Star) table features local produce and estate wines.
