The pitch? Nestled in the stony Val d'Enfer, between vineyards, olive groves and garrigue, at the foot of the hilltop village of Les Baux, the Hotel Baumanière has been a landmark of Provencal art de vivre for decades. In 1969, current owner Jean-André Charial took over the reins of the establishment, founded in 1945 by his grandfather Raymond Thuillier. Today, this legendary 5-star hotel, a member of the Relais & Châteaux family, extends over some 20 hectares within the Alpilles regional park.

What's the hotel like? It's made up of five buildings surrounded by Mediterranean gardens: l'Oustau, the historic center, la Guigou, a Provençal farmhouse, the 18th-century Manoir and two rural settings, Carita and Flora. These living spaces house 53 rooms and suites decorated by Geneviève Charial. They combine the old and the new, mosaics and marble, antiques and design collections. Its two gourmet restaurants have contributed to its reputation: l'Oustau de Baumanière, where three-starred chef Glenn Viel combines tradition and creativity, and La Cabro d'Or, where Michel Hulin prepares Provencal dishes. What's the spa like? Reflecting the minerality of the exterior, the spa at Les Baux-de-Provence radiates a pure, untamed atmosphere. 2. Domaine de Manville, Les-Baux-de-Provence

The pitch? Also at the foot of the village, Patrick Saut bought the farm property where his grandfather used to keep his beehives. Assisted by his wife Edith, he transformed the former farmhouse into a rural hotel stretching over a hundred hectares, with an eco-certified 18-hole golf course. What's the spa like? It's like an interlude from which the scent of verbena and jasmine wafts forth. 3. Hotel b Design & Spa, Le Paradou

The pitch? "Beau, bien, bon" (the motto of the place) or b as in Bourguignon (the name of the owners). The hotel's name came to André and Nancy when they imagined this 5-star hotel on the outskirts of the village of Les Baux, created above an olive grove with the help of decorator Christophe Pillet. The contemporary building (with swimming pool) evokes the bastides of yesteryear. Inside, white harmonizes with precious materials such as brushed wood and Corian. A self-taught chef, Nancy concocts feminine, light, fragrant cuisine, with Provencal touches.

What's the spa like? The 250m2 wellness area features a hammam, a sensory pool, a cold-water corridor and a fitness room. In the cabins, the practitioners provide exclusively Olivier Claire treatments, a partner brand with active ingredients extracted from plant cells, organic oils and fresh pollen. L'Expérience Olivier Claire combines body exfoliation and facial sculpting to relax the features, brighten the complexion and reduce travel fatigue.

4. Mas de l'Oulivié, Les Baux-de-Provence

The pitch? Isabelle and Emmanuel Achard have been running this 4-star Provencal-style hotel for 27 years, 2 km from the village below, amidst garrigue and olive groves. The hotel is surrounded by 109 olive trees, which produce the AOC "Huile d'olive de la Vallée des Baux de Provence" each autumn. The hotel was built with respect for Provencal architecture: Baux stone frames, old-fashioned terracotta, reclaimed tiles, rows of genoises, shutters in the silver-gray hue of the olive trees. The 25 rooms and 2 suites feature distressed oak furniture, designer fabrics and lighting created by local artisans. At lunchtime, chef Yannick Martin prepares dishes inspired by local produce.
