Under the leadership of Savoyard chef Antoine Cevoz-Mamy, who is deeply attached to his region, the restaurant offers a poetic cuisine d'auteur, delicately crafted around seasonal local specialties and revisited on discovery menus. Local producers are given pride of place, although some fruits, vegetables and herbs come directly from the kitchen garden cultivated on the 12-hectare estate bordered by the Bauges and Chartreuse mountain ranges. Signature dishes include crayfish sublimated with radishes, herbs and flowers as an amuse-bouche; Arctic char, the king fish of Lac du Bourget, with green coffee and Arnad bacon; and smoked beef gravlax with tomatoes and basil. L'Incomparable brasserie, meanwhile, opts for traditional French cuisine with a modern twist. Food and wine pairing is assured by expert Yves Bontoux and his team of sommeliers, with a fine, chiseled menu of France's finest wine estates to discover, always with excellence as the watchword.
On the relaxation side, the Black Diamond Luxury Spa provides a moment of grace. In the grounds, a heated outdoor pool opens onto the lake and mountains, as do the sauna and whirlpool. 2. Château Brachet, the illustrious meeting place for crowned heads

3. Domaine Xavier Jacqueline Père & Filles, bed and breakfast in a winegrower's house
When Xavier Jacqueline, an oenologist by trade, took over the family winegrowing adventure and the century-old Aix-les-Bains winery in 1985, he designed a 6-hectare vineyard in Brison-Saint-Innocent, now certified organic.
