Here, there’s no flashy sign or street-facing window: the restaurant nestles inside a five-star hotel, between the Madeleine and the Tuileries, and feels almost like a hidden gem. Perhaps that is what has made it, since 2017, one of the most sought-after Italian restaurants in the capital—a hidden gem that’s passed down by word of mouth rather than stumbled upon.

Ugo Alciati, a Piedmontese culinary icon from Fontanafredda

The menu bears the name of Ugo Alciati, a Michelin-starred chef at the helm of Guido Ristorante in Serralunga d’Alba, in the heart of the Piedmont vineyards, and an international truffle ambassador. It is indeed at Fontanafredda that his Michelin star is based. In Paris, he entrusts the kitchen to Marco Terenghi, a highly talented young executive chef. The duo shares the same vision of Italian cuisine: few ingredients, carefully selected, and a technique that takes a back seat to the product rather than masking it.

This is undoubtedly where L'Assaggio really shines. The agnolotti, prepared according to the chef’s mother’s recipe, stuffed and topped with a meat sauce simmered for three days, have become the restaurant’s signature dish: you can’t go there without being recommended to try them. Sometimes we prefer the homemade tagliolini made with forty egg yolks (yes, really!) and black truffle, or a risotto that changes with the seasons. Piedmontese vitello tonnato and braised beef cheek round out a menu designed to stay focused. The fish carpaccios elegantly complement the offerings during the warmer months.

And the desserts—ranging from the tiramisu, which ranks among the best in Paris, to the famous mountain milk flower ice cream, served right in front of the guest—caps off the meal with a sweet finale that’s more about delicacy than spectacle.
