Brach Madrid, the Evok Group’s flagship restaurant on Gran Via, offers a Sunday brunch that blends Mediterranean generosity with French sophistication. A weekly ritual curated by Chef Adam Bentalha, featuring pastries by Fabien Emery.

A concept inspired by Paris, adapted for Madrid

The idea isn’t new, but it has proven itself: for several years now, brunch at Le Brach Paris has been one of the must-attend Sunday events in the French capital. Its Madrid counterpart captures the same spirit—the high standards, the attention to ingredients, and the leisurely pace—while adapting it to the city’s rhythm. Madrid wakes up late and eats even later; here, guests are offered a format that fits right in without losing its essence, served from 11 a.m. to 4 p.m. Le Brach, one of Madrid’s most beautiful hotels, located since 2024 in a building on Gran Via, features 57 rooms and suites, a seventh-floor terrace, and a wellness area called La Capsule. Brunch rounds out a dining offering that already centers on a restaurant in Madrid and a pastry shop.

On the plate? Mediterranean cuisine featuring seasonal ingredients

The buffet, overseen by Chef Adam Bentalha, is organized around three main themes and features a selection of ingredients prepared according to their availability. When it comes to vegetables, the selection focuses on fresh raw vegetables and simple preparations—such as marinated artichokes and roasted seasonal vegetables—that let the ingredients shine without overpowering them. Fish is prepared with precision, while meats are slow-cooked and braised. Spices are used sparingly to add depth. The buffet’s philosophy is one of fluidity: the dishes evolve throughout the service, depending on daily deliveries and demand. This approach stands in stark contrast to the fixed buffets found in major hotels and aligns with the culinary philosophy that Adam Bentalha also champions at the hotel’s restaurant.

While the savory offerings live up to the market’s reputation, it’s on the sweet side that the brunch reveals its most unmistakable French signature, with a selection of golden pastries—croissants that crackle at the first bite, éclairs, and flans pâtissiers—paired with perfectly whipped creams, citrus fruits, and chocolates. These French classics, executed with precision, are often the highlight of Brach’s brunches and one of the reasons most frequently cited by the restaurants’ patrons.
