1. Lily of the Valley, La Croix-Valmer | The wellness hub of the Saint-Tropez peninsula
The wellness offering? At the heart of the Lily of the Valley concept, the Shape Club is dedicated to weight loss. It’s not a medical spa with drastic diets, but a luxurious haven offering preventive and holistic health care. It is based on the “TGV” method developed by Dr. Jacques Fricker, a nutritionist at Bichat Hospital, who, after 10 years of research at INSERM, developed his own personalized approach. Lose weight in a sensible way, without deprivation, thanks to a diet tailored to each individual.

Structured over periods of 4, 7, 14, or 21 days, the three programs—Optimal Weight and Serenity, Intensive Weight Loss, and Weight Loss and Exercise—are supervised by a dietitian. In addition to rituals, massages, and body wraps, these programs are structured around specific treatments, such as pressotherapy, INDIBA therapy (radiofrequency detox), and cryotherapy. Nutritional guidance, led by the chef and the dietitian according to the principles of Dr. Jacques Fricker, is provided throughout the entire stay.
The programs also include private coaching sessions, group classes—cycling, float yoga, Vinyasa yoga, Pilates—and outdoor sports activities: Nordic walking, mountain biking, and coastal walking. Backed by a medical assessment, these personalized stays help guests adopt new lifestyle habits, particularly when it comes to diet. Saunas, a hammam, a snow shower, an ice fountain, and a semi-Olympic-sized pool round out the offerings at this wellness hub overlooking the Mediterranean.
The setting? Perched on the heights of the Saint-Tropez peninsula, in the heart of the unspoiled Cap Lardier estate and on the edge of Gigaro Beach, this paradise surrounded by umbrella pines opened its doors in the summer of 2019. The hotel is a 5-star property and a member of the prestigious Leading Hotels of the World collection.
The style? Elegant, nestled amid lush vegetation, blending the essence of a Provençal village with the “slow life” and modernity. Star designer Philippe Starck envisioned a vernacular and organic architecture for Lily of the Valley, consisting of small houses arranged in a village layout and topped with Roman-style tiles. The complex spans two levels: a base of concrete arches on the ground floor, topped by pergolas on the upper level. Inside, Starck has blended tropical woods, solid oak, fawn-colored leather sofas, tiger-striped marble from Portugal, and local craftsmanship.
What about the dining experience? In the kitchen, Vincent Maillard showcases the Mediterranean terroir. His sun-drenched cuisine tells the story of farmers, market gardeners, and fishermen. At the aptly named Le Vista (offering a breathtaking view of the Mediterranean from the terrace), the menu highlights seasonal ingredients, with 50% of the offerings consisting of lighter dishes: ricotta ravioli with summer truffles and artichokes, Lily salad with quinoa and seasonal vegetables, cold tomato soup with red berries and purple herbs, or fresh-caught fish with vierge sauce and seaweed.... At Lily, there are no restrictions—only endless possibilities for healthy eating, as the entire menu was developed collaboratively by the chef and Dr. Jacques Fricker. To highlight the celebration of regional craftsmanship, Philippe Starck has brightened up the restaurant with a collection of olive wood bowls, ceramics from Vallauris, and glass bottles from Biot.
Whether you’re looking for a light meal paired with juices, teas, and herbal infusions, or a protein-packed smoothie between workouts, the 100% healthy dishes at Le Club House are the perfect choice. Vincent Maillard also creates Italian-inspired dishes for the beach club on Gigaro Beach.

How many rooms? 52 rooms and suites ranging from 35 to 105 m² with private terraces and views of the Mediterranean. Some, located near Gigaro Beach below the hotel, even feature private pools and gardens.
Where is it? In the town of La Croix-Valmer, about 20 minutes from Saint-Tropez and just 500 meters from Gigaro Beach. It takes about 55 minutes from Toulon-Hyères Airport (TLN) and a good hour from the Toulon SNCF train station. Transfers are available upon request from the airport, as well as to and from Gigaro or La Croix-Valmer.
