1. Domaine Riberach | Sleep in a former wine vat

The setting? Nestled between Catalan country and Cathar lands, Domaine Riberach is located in the garrigue, at the foot of the medieval castle of Bélesta. Nestled in one of Occitanie’s most beautiful vineyards, the 3-hectare estate—with 10 to 12 hectares of vineyards—features a four-star ecolodge, a gourmet restaurant, a lounge terrace, and a spa, all housed in a winery from the last century.

The style? The former cooperative has been renovated in a minimalist design—blending industrial style with natural materials—by Luc Richard and Karin Pühringer, the architects and owners. An ecological mindset and respect for the terroir are their philosophy for this hotel in the Pyrenees. At the restaurant La Coopérative, chef Dennys Teixeira champions inventive slow food with a focus on locally sourced ingredients. How many rooms? The Domaine Riberach features 18 rooms and suites. This four-star property offers the unique opportunity to sleep “above” and “inside” the historic wine vats dating back to 1925. " Above" the vats, colonial-inspired furnishings and colorful walls complement a terrace or panoramic balcony. The 7 rooms and suites “inside the vats” are located in the estate’s old concrete vats, featuring oak flooring, white walls, and a midnight blue ceiling. The feeling of being cut off from the world is complete.

Wellness offerings? The spa is divided into five areas: a boudoir, a hammam, a sauna, a spa pool, and a treatment room. The natural pool, designed as a biotope, is filtered by plants.

What sets it apart? The estate’s slow lifeatmosphere, which aligns it with sustainable tourism, as well as its unique concept: spending a night in old wine vats.

2. Souki Lodges & Spa | Two cabins at the foot of Pic du Vissou

South of Lake Salagou, in the hills above the village of Cabrières, a path lined with holm oaks leads to Souki Lodges & Spa, two eco-designed lodges made of wood and glass. The 50-square-meter lodges, named “ L’Arbre perché ” and “ Le Nuage ”, feature a 60-square-meter terrace, a rain shower, and a private jacuzzi. From the modern, wood-paneled interior, floor-to-ceiling windows offer a majestic view of the foothills of the Causses and the surrounding garrigue. A natural infinity pool, nestled below, overlooks the Boyne Valley.

Good to know? There are beautiful hikes to enjoy in the area, either on foot or by electric bike, which are provided to guests upon arrival.

3. Coucoo Grands Lacs | A Night on the Water in Franche-Comté

In the Haute-Saône department, on the shores of Lake Bonnal, this unique eco-resort founded in 2009 offers the chance to spend the night in the trees or on the water… The treehouses perched high in the trees are eco-friendly and consume neither water nor electricity. The floating cabins offer basic comfort thanks to wood-wool insulation and a sink with a ten-liter supply of non-potable water. Some “Family” cabins are powered by solar panels. It’s the perfect spot to disconnect from the world and soak in the tranquility of the Great Lakes.

4. Les Échasses Golf & Surf Eco Lodge | Slow Living!

South of the Landes Forest, 15 minutes from Hossegor Beach, 7 “modges” and 1 family lodge surround the tranquil blue of a pond. The architect-designed cabins, built on stilts and eco-friendly, have been furnished in a Japanese and minimalist style. The estate, certified by Relais du Silence, is a haven of tranquility that celebrates the slow life: the croaking of frogs, reading in a hammock, a swimming pool, a wood-heated outdoor hot tub, a sauna, and a massage room. 7. Bain de Forêt | Eco-Lodge in Hauts-de-France

On the Opal Coast, in the heart of the vast Hardelot pine forest, the Bain de Forêt guesthouse offers two accommodations that are a cross between a treehouse and an ecolodge. Furnished with eco-friendly and sustainable furnishings and crafted from Douglas fir, larch, or fir, the two secluded, heated lodges feature a terrace on stilts with their own organic hot tub. “La Cabane” —which resembles a teepee— can accommodate up to 4 people, while “Le Refuge” can accommodate up to 6 people.

Perched between 7 and 13 meters high in the century-old oak trees of the Oise Regional Park in Raray, these cabins are accessible via spiral staircases or ladders. Designed to blend seamlessly with the environment, the light-wood lodges are heated, equipped with electrical outlets, and feature a bathroom with a shower. The family cabins, which include one large double bed and three single beds, are child-safe. 9. Les Gachets | An ecolodge nestled between sky and mountains

In an old hamlet at the foot of Mount Obiou, on the edge of the forest, this former farmhouse has been converted into an eco-friendly guesthouse. The house’s four bedrooms, renovated to meet environmental standards, are heated by solar panels. The common areas include a kitchen, a living room, a sunroom, and a bathroom. On the first floor: a fireplace, a 70-square-meter yoga room, and a panoramic terrace, with views stretching to the Beaumont region and the Écrins mountain range. 10. Domaine de Sommedieue | Ponds and Fly Fishing in the Meuse

This charming hotel-restaurant with a distinctly British style is located 15 km south of Verdun, in the Meuse region. A little slice of paradise for anglers, the estate features a 12-hectare enclosed area, including 4 hectares of water and 3.5 kilometers of riverside trails. The Domaine de Sommedieue is crisscrossed by a river and small, fish-filled ponds that cover old clay pits. Housed in a 19th-century building, the hotel features 6 rooms ranging from 35 to 50 m².
