The designer has created an inhabited, narrative décor, halfway between 1920s nostalgia and a raw modernity that seeks not to seduce but to move. Terracotta-paved lobbies, woven-leather ceilings, glazed-earth mirrors, baroque seahorse lamps and warm woods everywhere: every object seems to have a story to tell. You feel less in a hotel than in the home of a well-traveled cosmopolitan friend.

On the kitchen side, chef Adam Bentalha deploys a Mediterranean and sunny menu around an imposing Josper oven visible from the dining room - that Spanish brand of coal-fired ovens that makes the difference in the texture of the cooking. We like to start with the "para picar": velvety hummus, Josper-smoked babaganoush, langostinos crujientes served with basil mayonnaise or the croquetas de cecina, winners of the Hotel Tapa Tour 2025.
The raw bar follows with some fine moments: crispy rice and tuna tartare with spicy mayonnaise, roasted octopus aguachile with Josper, crispy sea bass tacos with guacamole. Arguably Madrid's most famous and Instagrammed restaurant. On Calle Jorge Juan, the exuberant decor - tropical jungle, hanging plants, golden lights - sets the scene for an electric address where the mood never lets up. The cuisine travels from Brazil to Japan via Argentina, with wood-grilled meats and a popular sushi bar. Forget white tablecloths. Designed by Javier Bonet, the décor deliberately imitates a slaughterhouse or wholesale market: ceiling hooks, immaculate walls, steel tables. Service here is a performance in itself - the chefs finalize the dishes in front of you, in a precise, theatrical ballet.
