Fleur de Loire, Loire Valley

Housed in a 17th-century hospice built by Gaston d'Orléans on the banks of the Loire River, Fleur de Loire is a sustainable jewel case led by two-star chef Christophe Hay. The 5-star hotel overlooks the river and features 44 rooms, including 11 suites, in two wings inspired by the Loire landscape.

Fleur de Loire also boasts two gourmet restaurants: the "Christophe Hay" restaurant, a veritable stage for free expression with the kitchen installed in the center of the room, and the "Amour Blanc", an ode to the eponymous carp, which offers a bird's-eye view of the Loire thanks to its panoramic bay windows and its own meat maturing cellar. Finally, a Sisley spa, a brand renowned for its expertise and treatments in phytocosmetology, offers a menu of treatments, massages and beauty rituals created to measure.

Good to know? On the first floor of the "Amour Blanc" restaurant, the patisserie kiosk is a boutique, tea room and delicatessen all in one.

How to get there: by car, allow 2h45 minutes from Paris via the A6 and then the A77.

Domaine de Primard (Guainville, Eure-et-Loir)

Nestled in 40 hectares of parkland along the river Eure, Domaine de Primard, one of the flagship addresses of Domaines de Fontenille (Luberon, Marseille, Minorca, Hossegor, Seignosse, Saint-Rémy-de-Provence...), opened its doors in June 2021. With 39 keys, including 9 suites with terraces, divided between the château and three outbuildings, Domaine de Primard combines 18th-century charm with a revisited Directoire décor. The castle features a fleet of electric bicycles, a 24 x 6m heated swimming pool and a 450 m² Susanne Kaufmann spa (with sauna, hammam, two Japanese baths and a fitness area), offering visitors an ideal getaway for a romantic or family weekend. On the gastronomic front, chef Romain Meder oversees the two restaurants housed in a farmhouse, one of which has been awarded a Michelin star and a green star.

Located south of Paris, just a 15-minute drive from Gien on the banks of the Loire, the Auberge des Templiers will delight couples and families looking for a country getaway, as well as business travelers in search of greenery. Hotel Louvre Lens, Lens

A stay in the Pas-de-Calais coalfield? And why not! UNESCO sites, Art Deco heritage, gourmet cuisine, not to mention the must-see Musée Louvre-Lens, make the mining town an attractive destination. Just a 3-minute walk from the famous museum, Hôtel Louvre-Lens has a real history linked to the region's mining past. It's a former mining mine that's been transformed into a 4-star hotel with a cocoon feel. The original brickwork has been preserved, enhanced by contemporary furnishings and sober black walls. The common areas are convivial, with fireplaces and works of art, complemented by a wellness area, a neo-estaminet-style brasserie and a bar.

Domaine Les Crayères, Reims

Set in seven hectares of verdant parkland, the legendary Domaine Les Crayères is housed in a 1904 Belle Époque château that has been a 5-star hotel since 2010. Stamped Relais & Châteaux, the address offers visitors all the splendor of a period residence - wood panelling, panelled walls, glass roof in the La Rotonde bar - which extends into the magnificent dining room of chef Christophe Moret, 2 Michelin stars. His Le Parc restaurant will appeal to discerning palates with its noble products (lobster, langoustine, foie gras, turbot). Only 20 rooms and a few suites in a Cottage, an exclusive and exceptional address.

La Côte Saint-Jacques & Spa, Burgundy

On the banks of the Yonne, La Côte Saint-Jacques' 2 Michelin stars do not impress its new chef, Alexandre Bondoux, a well-trained young chef and nephew of Jean-Michel Lorain, who has taken full responsibility for the kitchens. The hotel, both 5-star and Relais & Châteaux, boasts particularly soothing rooms overlooking the Yonne, as well as a spa area with indoor pool, solarium and panoramic jacuzzi. In the kitchen, the chef is committed to a more responsible approach to cooking, favoring fish from the Loire (such as toothfish, to be discovered), while sommelier Thomas Noble surprises by offering mostly natural wines by the glass. For lovers of fine cuisine who are ready to break away from their usual habits.

Getting there: by car, allow 1h30-2h from Paris via the A6.

Le Barn (Le Moulin de Brétigny, Yvelines)

A breath of fresh air in the unspoilt surroundings of the Forêt de Rambouillet, Le Barn is a bucolic 4-star retreat just 45 minutes from Paris. This country-chic hotel attracts nature lovers and Parisians in search of a rural getaway. Coated cotton canvas, leather, wood and cork take pride of place in the two authentic metal-framed farm barns that house the hotel's 73 rooms, all of which have a natural feel. Children will be delighted to try their hand at horse riding, harvest vegetables from the garden or watch a film in the dedicated projection room, before sleeping with their friends in a dormitory adjoining the parents' room.

Good to know? Locavore cuisine is served around large wooden tables or under the glass roof.

What's more? On May 20, 2023, Le Barn became the first hotel in France to be awarded the "Prévention Excellence" label, developed by Accor and Bureau Véritas to certify that the level of safety and hygiene measures is adapted to the resumption of activity in the hotel and restaurant sector.

Abbaye des Vaux de Cernay (Vallée de Chevreuse, Yvelines)

Just renovated by the Paris Society, this 12th-century Cistercian abbey, former home of the Rothschilds, lies in the heart of the Vallée de Chevreuse, in the Rambouillet national forest. The 65-hectare estate is dotted with romantic ruins, lakes and small stone bridges. In the rooms, the absence of television and the capricious Wi-FI make for a truly rejuvenating break. The former monks' refectory is now the hotel's restaurant.

Bonus tip ? Opt for a superior category room (from €180) rather than the small attic rooms.

Getting there: just an hour's drive from Paris (via the A12/N10 or A10).
