1. Hotel Burdigala Bordeaux

Bordeaux's first historic 5-star hotel, Le Burdigala reopened its doors in 2023 after a two-year metamorphosis orchestrated by the Inwood Hotels group and architect Fabien Roque. Gone is the classic 4-star hotel, replaced by a lifestyle and hybrid hotel, designed as a place to live for travelers and locals alike. Located just a stone's throw from the Mériadeck business district, the hotel now combines contemporary design and a warm atmosphere, with a scenography that plays on noble materials, warm tones and omnipresent wood.

The hotel has 83 rooms and suites, including 7 duplexes and 8 suites spread over 5 floors. Designed to accommodate families, digital nomads and groups of friends alike, they offer all the comforts expected of a modern five-star hotel, with plenty of space for teleworking or simply relaxing in front of Netflix. The heart of Le Burdigala? Its light-filled Atrium, a central, flexible space that changes with the day: coworking in the morning, meeting or relaxation space in the afternoon, convivial bar in the evening. In the spirit of a family home, the Game Room, equipped with a PlayStation 5, the 22-seat private cinema (reserved free of charge for suite guests) and the many little touches, such as the popcorn machine and free-access games, all contribute to the relaxed, welcoming atmosphere.

On the dining side, the Madame B restaurant is a gourmet address accessible to all. Visible from the street, with its large bay windows and luminous dining room, it is entrusted to chef Grégory Vingadassalon (a former Alain Ducasse and Saint-James chef). Here, old-fashioned dishes are revisited in the form of small plates for sharing: perfect eggs, roast camembert with honey and walnuts, marinated onglet or comforting desserts, such as grandma's rice pudding. All in an intimate atmosphere, with the option of a private lounge hidden behind a curtain.

But Le Burdigala doesn't stop there. Opposite the hotel, l'Atelier du Burdigala offers a space reserved for seminars and professional events, with 5 modular rooms and a Billy Bar, a future Bordeaux spot with terrace and signature cocktails. In the near future, a spa will also be opened in the basement of the 5-star Bordeaux hotel, while Sunday brunch under the glass roof and on the green terrace promises to become a new must-do event in Bordeaux.

2. Mondrian Bordeaux Les Carmes

Opening in November 2023, the Mondrian, a prominent member of the luxury lifestyle brand of the Ennismore group (Accor), is the champion of Bordeaux newcomers! The 5-star Bordeaux hotel has taken possession of the Hanappier and Calvet winery, built in 1871 and enlarged ten years later in a neo-Gothic style. Destroyed by fire in 1966, the interior was rebuilt to house a gourmet restaurant, the Table Calvet. The Pichet family, owners of Château les Carmes Haut-Brion, acquired the property in 2018, with plans to build a five-star hotel there, with Philippe Starck and Jean-François Le Gal at the helm. Only the historic blond-stone façade has been preserved, while the interior has been completely redesigned to showcase Bordeaux classicism with a hint of Japanese inspiration.

While Philippe Starck's signature elements are omnipresent: mirrors, molded concrete walls, desks behind the beds, the designer has invited a few innovations tinged with Japanese influence. This is demonstrated in the lobby, where 19th-century Japanese-style lanterns provide the perfect lighting... An obvious influence in the restaurant, where an open kitchen lets you enjoy the spectacle of sushi and maki being prepared, and where some of the walls are adorned with photos of traditional Japanese hairstyles... The 97 rooms and suites (from 25 to 52 m²) seduced us with their decor, halfway between tradition and contemporary ambience. Bathed in light, some with tree-lined terraces, they display noble, natural materials: leather seats, wooden doors, brass and always mirrors..

Top-flight Japanese cuisine

Headed by chef Masaharu Morimoto, a Michelin-starred star in the USA whose first address in Europe, this is a maelstrom of maki, sushi, sashimi and the chef's signature dishes such as Peking duck. But lovers of local gastronomy can rest assured: oysters from the Arcachon Basin, entrecôtes bordelaises and cannelés also have pride of place here... As for the spa, it houses four cabins, one of which is a double, with treatments by French brand Codage. An infrared sauna, a hammam and a fitness area complete the facilities.

3. Le Boutique Hotel & Spa

No, it's not a newcomer! But it is one of our favorites. Opened in 2010, Le Boutique Hôtel, nestled in an 18th-century building typical of the fine houses of Bordeaux, was awarded its fifth star two years ago. Its location is undoubtedly the best there is: a stone's throw from the Grand Théâtre in the heart of the Golden Triangle, but in a quiet side street. Behind its historic façade are 29 rooms and suites, all different and bearing the names of wine estates: Château Haut Brion, Pavie, Margaux, where the decor, by owners Christophe San José and his daughter Anaïs, has the originality to combine the elegance of a classic building with tasteful design: stone and antique parquet floors answer the call, alongside furniture and objects by Philippe Starck, Kartell and Eichholtz. The suite to book is the Château Pichon Baron, 70 m2 with a terrace, Jacuzzi and sauna. The secret tip of the 5-star hotel in Bordeaux is the green patio, an unexpected haven of peace in the heart of the city, with a swimming pool and spa.

Plus: The Wine Bar, where the wine cellar offers a selection of Bordeaux grands crus and discoveries from around the world, served by the glass. This tasting is accompanied by plates to share: charcuterie and cheese boards, as well as hot dishes.
