In the heart of the gardens, Il Giardino unfolds under a planted pergola in a bucolic, Italian-inspired atmosphere. Led by executive chef Nicola Canuti, this new restaurant pays homage to the Italy of terroirs and childhood memories. Here, pasta is homemade, flours are sourced from small producers, and every plate celebrates transalpine generosity: paccheri alla carbonara with crispy guanciale, langoustine risotto subtly iodized, smoked burrata with marinated zucchini, or perfectly cooked fritto misto. These dishes are complemented by delicate desserts imagined with pastry chef Geoffrey Turpin - crispy chiacchiere with sabayon, gianduja dome or minute ice cream with lemon and limoncello. All served in a setting designed by Marine Ugo, combining natural materials and terracotta accents in a meticulously staged setting.

At lunchtime or for an extended aperitif, the B.Lounge is the most versatile venue at the Byblos. Between dips in the heated pool, you can share a board of fine charcuterie, a truffle pizza or a ceviche of the day, accompanied by original cocktails such as the Byblos Pastis Sour or the Nacho Sandy. The ambience, elegant but not formal, evolves throughout the day until nightfall. Last but not least, the Sky Bar, the latest addition to the Tropézian rooftops, overlooks the hotel in a hushed atmosphere. 4. Matsuhisa Saint-Tropez | Nobu arrives in Saint-Trop'
The Château de la Messardière in the hills of Saint-Tropez, now part of the Airelles collection, has teamed up with legendary Japanese chef Nobu Matsuhisa for the summer season. At Matsuhisa, his most premium concept already known at the Royal Monceau and on the Athenian Riviera, he offers diners " Franco-Pan-Asian fusion cuisine ", with a particular emphasis on seafood. But fans will also find his signature dishes, including " yellow tail sashimi with chili and yuzu soy sauce ", " black cod with saikyo-yaki miso " or " rock shrimp tempura ". 6. The Lily of The Valley Beach Club, and the hotel in general

In the Lou Pinet, a sixties refuge designed by Charles Zana and prized by aesthetes, the Beefbar created by Riccardo Giraudi is an undeniable success. 10. La Tartane | Charming Provencal hamlet
Located on the Route des Salins, 9 km from the famous Pampelonne beach, La Tartane (formerly the Hôtel Saint Amour) was designed by the architectural firm Notoire. Like an intimate seaside hideaway, the 27-key 5-star hotel has been imagined as a Provencal hamlet amidst a theater of greenery. Inside, an elegant sobriety perpetuates the charm of the mythical peninsula: bright colors, rattan furniture and stylized drawings painted on the walls by Brazilian artist João Incerti. The enchantment of the south continues outside, with its open-air restaurant and swimming pool lined with large wooden beds.

What makes the difference? The suites, spread over two or three floors, offer pleasant living spaces.
