In Castelnau-le-Lez, Domaine de Verchant is one of Montpellier's finest luxury hotels, combining contrasts with elegance. Behind the walls of a former 14th-century farmhouse, entirely restored by the Mestre family, lies a hotel complex designed for well-being and reconnection with oneself. The estate celebrates both its terroir - almond and olive trees, a 2,000 m² vegetable garden - and its openness to the world, through refined architecture, holistic treatments and ambitious locavore gastronomy.

After several phases of extension, the spa hotel in Montpellier today inaugurates a series of new, sleek rooms, a signature suite with swimming pool, and above all a clear shift towards well-being with an extension to its spa.

What's the hotel like? Heritage, design and overall well-being

Set in 17 hectares of parkland classified as a Jardin Remarquable, Domaine de Verchant blends traditional blond stone architecture with clean contemporary lines. You are greeted in a glass pavilion bathed in light, surrounded by Mediterranean vegetation. Once you've crossed the threshold, you discover a harmonious group of buildings housing the rooms, some in the restored farmhouse, others in modern constructions, all opening onto the historic garden, the vineyards or one of the two swimming pools. You can walk or ride between the two restaurants, the spa, the gym, the Mediterranean garden and the vineyards. The new rooms, inaugurated in 2025, blend discreetly into the landscape, with minimalist aesthetics, generous volumes and soothing views of the surrounding nature.

This 5-star hotel in Languedoc Roussillon remains true to its winegrowing vocation: Verchant produces its own cuvées, including some exclusives such as "1582", a tribute to the estate's year of birth, the delicate "Marcelle" and the resolutely eco-responsible "Mazette" range, packaged in returnable bottles with recycled labels. You can enjoy them by the glass at the bistro or gourmet restaurant, or take a few cases home as a souvenir of your weekend in Montpellier.

And the bedrooms?

The estate has 49 rooms and suites, divided between the historic château and a contemporary extension, which houses 25 new rooms and suites. Two very different atmospheres, but the same attention to detail and comfort.

In the contemporary wing, the rooms feature a refined, luminous style with mineral tones. Designer furniture by Poltrona Frau, Cassina or Patricia Urquiola, large picture windows and, in some cases, private terraces overlooking the surrounding vineyards. The bathrooms are elegant, and all rooms feature Diptyque products. The highlight of this new wing is the spectacular Quintina Presidential Suite, 300 m² of interior space with private elevator, gym, massage cabin, indoor pool overlooking the vineyards and vast terrace. A suite conceived as a self-contained villa, hidden from view.

Each of the château's rooms has its own flower name and unique identity. Some have beautiful exposed stonework, and some have terraces overlooking the garden, classified as a "Jardin Remarquable". The atmosphere here is more romantic, with warm decor.

The room to book?

The Suite Privilège 214 in the contemporary wing, 88 m² and 40 m² terrace flush with the vines, ultra-luminous with private garden (from €979 per night). In the château, the Suite Neige d'Avril (50 m², 27 m² terrace), round bed, whirlpool bath open onto the bedroom, ideal for a romantic getaway (from €809 per night).

Gastronomy?

When it comes to dining, Domaine de Verchant cultivates two ambiances. Marcelle, one of Montpellier's finest restaurants, named after the owner's grandmother, offers a refined experience from Tuesday to Saturday evenings. Chef Alexandre Caillaud's fine, delicate cuisine is inspired by produce from the kitchen garden, local pickings and exceptional houses such as Pétrossian. His menu, devised in collaboration with two-star MOF Franck Putelat, celebrates the flavors of the sea and the Languedoc region with a keen eye for detail. The chef comes into the dining room at the end of the service, personally greeting his guests after sending them a "amande de mer, amande de nos terres, fleur d'oranger", a plate of "petits pois, caviar Pétrossian, beurre blanc" or a "loup de Méditerranée, huître Agathe n°2, soccarat, jus court".

A few steps away, La Plage offers a more relaxed atmosphere around the infinity pool, facing the vineyards. Enjoy generous, sunny bistronomic cuisine, including oysters from the Thau lagoon by Maison Mason & Fils, fine cuts of Simmental beef matured on site, and signature cocktails with travel accents, designed as a passport to escape.

How's the spa?

At Domaine de Verchant, the spa is part of a resolutely holistic vision of well-being and longevity. Spanning more than 2,150 m² (the spa has just expanded by 300 m² with eight new treatment rooms and a yoga/pilates studio), the Wellness Club combines cutting-edge technology, medical expertise and personalized support through 3, 6 or 9-day programs. Developed with micro-nutritionist Valérie Espinasse, these stays combine health assessments, targeted treatments and tailor-made nutrition for in-depth action. Far from a simple spa, it's a true transformation center where you come to reset your body and mind, whether to regain energy, lighten up or sleep better. At the end of each treatment, you're given a personalized postcard with the practitioner's beauty tips, and the routine to follow at home. A much-appreciated gesture.

A unique synergy of treatments by Biologique Recherche or Valmont, osteopathic consultations, private sports coaching, healthy, immersive cuisine and a selection of advanced technologies, a quasi-medi-spa, a real wellness trend that has been booming in recent years. The INDIBA Edna Pro Max stimulates cell regeneration, the Iyashi Dome acts on deep-seated toxins through infratherapy, while the electromagnetic waves of the Waves 21 target muscle recovery, sleep or slimming as required. Complemented by pressotherapy and the Skin Instant Lab, this equipment acts precisely and effectively on every aspect of well-being.
