The vision of a destination reduced to its beaches, crushed by the weight of mass tourism and excessive urbanization. 01. Son Bunyola, Majorca

The hotel? Nestled in the heart of the Tramuntana mountain range, a UNESCO World Heritage site, Son Bunyola is a historic estate restored by billionaire Richard Branson. The 5-star hotel in Majorca is distinguished by its breathtaking location: 330 hectares of wilderness in Olympian calm, between olive groves and sheer cliffs plunging into the Mediterranean. The former 16th-century finca has been renovated in keeping with tradition, highlighting its original architecture. Here, luxury is discreet and authentic, a world away from glitzy palaces.

The rooms? The 27 rooms and suites, divided between the main Finca and the Tafona, combine rustic charm with modern comfort. Exposed beams, terracotta floors and carefully selected furnishings create a warm atmosphere. Panoramic sea or mountain views are omnipresent, and some suites (our favorites) are housed in the historic towers. In addition, three private villas with swimming pools are also available for an intimate stay.

Location? Son Bunyola is located 40 minutes from Palma, on Mallorca's unspoilt northwest coast. Just a few kilometers away, the village of Valldemossa, which inspired Chopin and George Sand, is well worth a visit. The cove of Banyalbufar, within walking distance, boasts crystal-clear waters perfect for a secluded swim.

Activities? The hotel in Mallorca offers a wide range of experiences: guided hikes in the Tramuntana, kayaking excursions, outdoor yoga classes and local wine tastings. 02. Cap Rocat, Palma Bay

Why book? It's hard to imagine a more majestic entrance to Cap Rocat. This ancient fortress, perched on a private estate of over 30 hectares (including 2 kilometers of coastline), was magnificently transformed into a boutique hotel in 2010.

The original architectural features of this typical citadel (battlements, drawbridge, sentinels, cistern) have given way to everything that goes to make up a top-class hotel: suites with patio, private terrace and sea view; oversized spa; gourmet restaurant with rooftop; yacht club or private cove with its own access to the sea, the hotel designed by architect Antonio Obrador cultivates its singularity through discreet luxury, far from any ostentation.

The style? A grandiose boutique hotel.

Good to know? Atmosphere casual chic at the Sea Club restaurant, where the whole of Majorca seems to have gathered to admire the sunset. If you're not staying at Cap Rocat, at the very least, go there for dinner. You won't regret it.

03. Can Simoneta, Canyamel

Why reserve? Who said Majorca was over-exploited or urbanized to the extreme? Certainly not the lucky guests of Can Simoneta, a 5-star boutique hotel located in Canyamel, the island's most exclusive area. With its vast garden perched on the cliffs of northeastern Mallorca, spectacular views, large outdoor swimming pool, Jacuzzi directly overlooking the sea and elegant, brightly decorated rooms, this adults-only establishment is faultless. 04. Sant Francesc Hotel Singular, Palma de Mallorca

Why book? The Sant Francesc Hotel Singular may be a contemporary hotel, but the building in which it is housed dates back to the end of the 20th-century, to 1860 to be precise. The former manor house, owned by Andrés Soldevila Ferrer, now boasts 42 rooms and suites, ranging in size from 25 to 60m2, each more elegant than the last.

From the vast lobby to the bathrooms, from the bar to the bedrooms, light, sober tones (off-white, beige, grey, taupe) take pride of place, with seductive results. Art collections and antiques underline the balance between history and modernity, while the establishment, despite its small size, boasts all the amenities of a grand hotel: garden restaurant (Quadrat, Mediterranean cuisine), rooftop pool, cocktail bar, massage cabins and fitness room. A member of the Small Luxury Hotels of the World, the Sant Francesc Hotel Singular is well worth a weekend in Palma.

Style? An urban gem.

Good to know? The hotel's splendid rooftop is open to all. It's the ideal spot to sip a cocktail as the sun sets over Palma.

05. The Lodge Mallorca, Sa Pobla

Why book? Interior designer Pilar Garciá-Nieto has completely renovated this former Spanish farmhouse set in a 157-hectare nature reserve of olive groves and lavender fields. With the appearance of a magnificent inn, The Lodge Hotel has lost none of its Mediterranean charm, inscribed in the stone. The 500-year-old load-bearing walls are now home to a sleek 6-room 5-star hotel. Light colors highlight the raw materials and the simple, almost rustic composition of the rooms, decorated with objects found in the area. This ecological and nostalgic approach to design lends an authentic style to a hotel that's as cozy as it is luxurious. There's also a terrace overlooking the outdoor pool lined with deckchairs. There are a further 18 rooms and suites, located in other, more recently constructed buildings away from the main building. Borrow one of the bikes provided to find these charming, functional cabins, which inspired the hotel's name. All have pretty patios, in an idyllic pastoral setting, with only the Tramuntana mountains and the surrounding bike paths on the horizon.

The style? Rustic minimalist.

Good to know? When it comes to gastronomy, two-Michelin-starred chef Ramón Freixa has set up shop here, with his Singular restaurant serving Mallorcan dishes that are sure to please every guest.

Where? Inland to the north of the island, about 20 minutes from the nearest beach.

06. Hotel Rural Predi Son Jaumell, Capdepera

Why book? Set in the heart of a centuries-old estate in the Mallorcan countryside, the 4-star Hotel Rural Predi Son Jaumell stands out as much for the sobriety of its historic building - with its pretty sky-blue shutters - as for the elegance of its contemporary interiors with their neutral tones and functional design.

Admittedly, the hotel is not the most luxurious of this selection, but it is one of the most charming. Particularly spacious rooms, top-notch gastronomy under the leadership of chef Andreu Genestra (a former member of elBulli's legendary kitchens), an outdoor swimming pool, proximity to the north-east beaches and solid value for money make this address one of the island's best values.

Bonus tip? Predi Son Jaumell's restaurant, the informal Senzill bistro under the veranda, is an excellent choice for dining in Mallorca using market and garden produce or local fish.

07. Pleta de Mar, Luxury Hotel by Nature, Canyamel

Why book? Sister hotel to the highly reputed Can Simoneta, Pleta de Mar is one of Mallorca's latest 5-star luxury hotels. 08. Son Brull Hotel & Spa, Pollença

Why book? Nestled at the foot of the Serra de Tramuntana mountains in the north of the island, this " rural sanctuary ", a member of Relais & Châteaux, has taken over an 18th-century Jesuit monastery and transformed it into a luxurious boutique hotel with a contemporary design.

In keeping with the monastic past, the rooms and suites feature a minimalist decor. Facilities include a beautiful outdoor swimming pool and a spa where the island's natural products, including prickly pear, take pride of place. As for the cuisine, with its blend of simplicity and tradition, the 365 gourmet restaurant and Mediterranean Bistro/Bar showcase the best of the island's organic produce grown on the immense estate (some forty hectares). 09. Zoëtry Mallorca Wellness & Spa, Llucmajor
