8. COMO le Montrachet | Puligny-Montrachet

This hotel, which recently earned its fifth star and is located 12 kilometers from Beaune, was once a village inn renowned throughout the region for its cuisine before it was acquired and renovated by the COMO Collection and its in-house designer, Paola Navone. The result is a harmonious blend of the property’s historic charm and contemporary, elegant design. South of Beaune lies a discreet, bourgeois estate with a well-established reputation—and for good reason: its restaurant was already listed in the first Michelin Guide, published in 1921. The 16 rooms of this Relais & Châteaux property feature a very classic decor—printed fabrics, Burgundy stone, wrought iron, soft lighting… — and in the kitchen, three-Michelin-starred chef Éric Pras—one of only thirty in France—who has honed his craft at renowned establishments (Troisgros in Roanne, Bernard Loiseau in Saulieu, Pierre Gagnaire in Saint-Étienne…). His mantra? “Tradition is the future”.
