2. La Côte Saint-Jacques, a legendary hotel and spa on the banks of the Yonne River

The pitch: between Auxerre and Sens, this spa hotel in Burgundy boasts a Michelin two-star gourmet restaurant, 22 rooms and suites with character, and one of the finest spas in the region. Who said good food and well-being were mutually exclusive?

What's the hotel like? On the banks of the Yonne, this 5-star hotel is a family affair, handed down from generation to generation since 1945. In the 1980s, Jean-Michel Lorain took over the reins of the establishment created by his grandmother, then run by his parents Michel and Jacqueline Lorain. Today, the saga continues. After 40 years at the piano, the chef has passed the torch to his nephew, Alexandre Bondoux, who officiates in a completely redesigned décor and a brand-new dining room. The establishment is appreciated for its large terraces, private balconies or Bow Windows overlooking the river or garden. Some of the very spacious suites and rooms, including one measuring 60 square meters, include a private spa on the terrace facing the river. The garden is both a tribute to French gardens with its flowers and topiaries, and a contemporary garden with its green wall.

What's the hotel spa like? Not content with offering one of the most sought-after culinary journeys for miles around, La Côte Saint-Jacques is also a coveted spa destination in Burgundy. Spanning 800m2 and two floors, the wellness area, ideal for a weekend or more, boasts premium facilities: an indoor heated swimming pool, cocoon cabins, two hammams, one of which can be used privately, a jacuzzi with a mesmerizing view over the river, not to mention an extensive range of services. There's also a new tropical area, designed by Karine Lorain and her team around a privatizable plant wall, where you can enjoy moments of relaxation thanks to balneotherapy and an infrared sauna. 3. Bernard Loiseau: a historic hotel housing one of Europe's finest spas

The pitch: at the foot of the Morvan nature park in Saulieu, this institution is the stronghold of Louis-Philippe Vigilant, a veteran of the Loiseau group's Parisian and Burgundy restaurants, who is carrying on the legacy of his mentor Bernard Loiseau, the three-star chef who died suddenly twenty years ago.

What's the hotel like? Classified as a Relais et Châteaux, the establishment boasts a double Michelin-starred restaurant, La Côte d'Or, its breakfast room listed as a Monument Historique and 34 keys on several floors served by the emblematic oak stair tower. Rooms feature antique terracotta floors and traditional Burgundian woodwork. Classic and superior rooms, or the duplex suite with mezzanine, have views of the famous Route Nationale 6, or of the gardens and courtyards.

What's the spa like? Spectacular: the spa has been awarded the "Spa A" label, a high standard of quality that evaluates services and facilities on the basis of one hundred criteria, guaranteeing an excellent moment of relaxation. 4. Château de Courban, a timeless house in the vineyards

The pitch: a mansion built in 1820 on the ruins of a château destroyed during the French Revolution and lost in the vineyards of Chablis and Champagne, bought by the Vandendriessche family and now a 4-star hotel, Nuxe spa and Michelin-starred gourmet restaurant.

What's the hotel like? All different, the 24 opulent rooms are divided between the historic building, the new buildings surrounding the swimming pool and the apartment in a 16th-century dovecote. For dinner, head for the estate's restaurant, where chef Maxime Lesobre, who has worked with Michel Rostang, Alain Passard and Jérôme Banctel, offers a cuisine centered on raw produce in the former barn.

5. Les Rives Sauvages, a 4-star lakeside resort

The pitch: just a stone's throw from Pontarlier, this 4-star resort surrounded by rolling green hills has its feet firmly planted on Lac de Saint-Point, France's third-largest natural lake, in the Haut-Doubs region of Burgundy, in the heart of the Franche-Comté region.

6. La Cueillette, a grand-century jewel nestled in the vineyards

The pitch: head for Meursault, one of Burgundy's most beautiful villages, 5 km from Beaune. Created in the 11th century by monks, the estate was transformed into a château in the 19th century. Today, it's a 4-star hotel with a gourmet restaurant, but it's also...a spa hotel with a unique concept.

What's the hotel like? It boasts 19 rooms, including 2 contemporary junior suites, all overlooking the park. The Bistrot de la Cueillette serves Burgundian dishes as generous as they are delicious.
