2. Vestige Son Vell | A renovated 18th-century manor house
An 18th-century palace restored to its former glory, this new Balearic boutique hotel is the second address in the Spanish Vestige collection. Son Vell is located on the western tip of Menorca, amid 5 hectares of gardens, about an hour from Mahon airport and 20 minutes from the historic town of Ciutadella, our island favorite. The Venetian-style main house houses six bedrooms, while the other 28 are in separate outbuildings scattered around the large farm estate.
The rooms enjoy unrivalled luminosity thanks to the volumes of the manor's rooms, sculpted from clay, wood and sandstone. The 33 contemporary rooms and suites feature neutral-toned textiles and whitewashed beams, with views from the upper floors across miles of rolling countryside. Guests can find two restaurants, Vermell (indoors) and Sa Clarissa (outdoors for dining in the last light of day), as well as three bars, one in the main house, the others near the two swimming pools.

3. Santa Ponsa | The classified estate
The pitch? For some, it's Menorca's most beautiful hotel. Two fincas for one estate, two atmospheres for two kinds of beauty. Santa Ponsa is a 17th-century palace, rebuilt in the mid-19th century and magnificently renovated in the 21st. This ochre-colored stone residence stands like an empress in the heart of eight hectares of enchanting vegetation, where fig, orange and palm trees draw their arabesques. The brick-red façade announces the entrance. Moucharabiehs and domes, Santa Ponsa, or the art of distilling the Spanish and Moorish past. The rooms? The 22 rooms and suites of this Relais & Châteaux are scattered between the main residence, the barns and a few smaller buildings. Rattan and wicker, light-colored or gilded parquet, and variations from gray-green to fir-green, from duck-blue to mint-lime: nature permeates right down to the plants - real plants! - in some bathrooms. Few furnishings, but plenty of space and light that enters without knocking.
Gastronomy? Nura, the main restaurant, is responsible for conjugating Spanish cuisine in the present - healthy, like this salad from the vegetable garden - as well as in the recomposed past, as illustrated by this picana of beef escorted by piquillos / barbecue sauce. In the gardens, reserve the chef's Sunday grills. And, for a moment for two, dine under the stars right in the vineyards. Finally, three times a week, we organize a cliffside aperitif, where you can contemplate the breathtaking sunsets from 60 metres above the sea.
Wellness? The spa treatments are by Susanne Kaufmann, a herbal brand renowned for its regenerative treatments. Above all, the protocols are based on in-house organic essential oils. Outdoor pool and indoor swimming pool, hammam and sauna, aquatic trail and massage cabins: but isn't the architecture of the place above all exceptional? The 18th-century cisterns have been superbly refurbished and feature a terrace for a relaxing moment overlooking the landscape.

4. Torre Vella | The old bohemian chic finca
The pitch? Owned by Domaines de Fontenille and a member of Relais & Châteaux, Torre Vella is a vast 300-hectare estate set harmoniously in the unspoilt landscape of southern Menorca. Classified as a "Cultural Asset of Exception", this estate looks back on almost 9,000 years of history, during which the watchtower that gives the estate its name was erected, before a traditional finca was established. And it's in the heart of these immaculate old farm buildings that you can now indulge in an authentic and serene stay.
The rooms? There are 17 rooms, divided into 8 categories of rooms and suites. And as Spanish cuisine is inextricably linked with conviviality, many dishes are even better when shared: such is the case with the unmissable paella, to be enjoyed to the sound of flamenco, or the barbecues organized twice a week by the chef, in the heart of the nearby vineyards for a dinner under the stars.

5. Divina Suites | A Baroque jewel in Ciutadella's old town
In the cobbled streets of Ciutadella, between aristocratic palaces and craftsmen's stalls, the Divina Suites offer an immersion in Menorcan refinement. Housed in a superbly restored 17th-century residence, this confidential hotel plays the Baroque card with subtlety: limestone walls, preserved frescoes, perfectly proportioned vaults.
Here, each suite is a small palace. With only eight keys, the hotel is all about space and tranquillity. Suites stretch from 40 to 50 m², revealing vast lounges where original coffered ceilings contrast with contemporary furnishings.
