1. Hotel in Upper Normandy: Hôtel de Bourgtheroulde, Rouen

Located on the beautiful Place de la Pucelle, a stone's throw from the Seine, the Hotel de Bourgtheroulde is a landmark in Rouen, former stronghold of William the Conqueror, Henry II Plantagenet and Richard the Lionheart. This listed 15th-century property bears witness to the history of the capital of Normandy, reflecting the Louis XII style, between flamboyant Gothic and early French Renaissance. It was built by Guillaume II le Roux, lord of Bourgtheroulde and member of the Exchequer of Normandy, who wanted a residence worthy of his rank, then completed and sublimated by his son Guillaume III. Century after century, the establishment has been restored without ever losing its style to a modernity unsuited to this heritage.

Now part of Marriott Bonvoy's Autograph Collection brand, the building's beige stone façade, beautifully decorated with mullioned windows and the Salamander, the emblem of François I, conceals an inner courtyard dominated by a turret. Two sculpted ensembles, one depicting Petrarch's Triumphs, the other the episode of the Camp du Drap d'Or, transport us to another era.

It's here, or in the interior dining room, that you can enjoy a drink and the dishes of the Aumale, a bistronomic restaurant with a fresh, seasonal menu. Octopus carpaccio, herb oil and yuzu pearls; open ravioli, zucchini, tomato confit and parmesan; and pineapple crumble, lemon sorbet and mint sauce comfort and surprise the palate.

Several room types are available in the 5-star hotel, which boasts 78 keys. On the one hand, modern accommodations in neutral tones. On the other, traditional decor featuring stone, wood and red carpeting. The Privilège and Prestige rooms cover 30 and 40 m² respectively.

2. Le Donjon in Etretat

Etretat is a landmark town on the Channel coast, known for its impressive cliffs and steep slopes offering magnificent views of the sea. The 19th-century Le Donjon - Domaine Saint Clair hotel is a perfect example. Nestled in verdant parkland, this Anglo-Norman estate with its family home feel comprises three buildings: Le Donjon, La Villa and Le Cottage.

The 25 rooms, all unique with romantic floral tapestries, are named after illustrious figures such as Guy de Maupassant and Sarah Bernhardt. 3. Domaine de Tilly in Boissey-Le-Châtel, hotel in Upper Normandy

In addition to owning the Hôtel de Bourgtheroulde in Rouen, Claude Le Roux, heir to Guillaume II Le Roux, was the first owner of the hotel in Normandy, the Domaine de Tilly, built in the 16th century. Three buildings are spread across the 400-hectare estate, which lends itself perfectly to weddings and festive events. The brick-and-stone château, with its impressive interior staircase "à la Rihour", is the centerpiece, standing alongside the Norman manor house, whose central section respects the half-timbered construction principles of the period, and the pressoir, an 18th-century building. These walls are shared by just 23 rooms, decorated in an uncluttered style with a few period furnishings. A special highlight is the L'Echiquier de Tilly restaurant and its gastronomic Impressionist menu, with dishes inspired by six paintings by Vincent Van Gogh and Claude Monet.

4. Les Pins de César in Saint-Jouin-Bruneval

Les Pins de César is the gentle name of this four-star hotel. The story goes back to the early 20th century, when César, an industrialist from Le Havre, fell in love with this valley leading to the sea, which he adorned with 1,000 Austrian pines. His grandchildren, who came to the area on vacation, later decided to build a house on this land in the 1950s, which was subsequently enlarged and is now sublimated by the fourth generation of the family. The house has been carefully renovated and decorated. Surrounded by several hectares of trees, the hotel boasts a swimming pool, outdoor activities and a 250 m2 barn that can be privatized for events.

Les Pins de César features several different rooms, cabins nestled in the rhododendron garden at the edge of the woods, and a six-person chalet. There's also a Nuxe spa and a culinary offer with snacks, picnic baskets, planks and barbecues in the park.

5. Château du Boulay Morin, hotel in Upper Normandy

Welcome to the time of princes and princesses. Château du Boulay Morin, above Evreux, was built in 1695 by Louis XIV for his wife Madame de Maintenon. Set in the Normandy bocage, this exceptional residence is set in 41 hectares of forest and gardens, with a swimming pool and tennis court, making it ideal for a sporting seminar. Multiple moldings, herringbone parquet flooring, large mirrors and gilded chandeliers, paintings of yesteryear, wood panelling and period furniture give the place a regal atmosphere without overload.
